You might have heard of Matty Matheson. He's one of Toronto's hottest chefs at the venerable Parts & Labour and the star of his own show on VICE Media's "Hangover Cures". In this video - courtesy of Vice's Munchies - he shows us how to make the perfect cheeseburger.
Before we get into the "meat" of this post, I think it's important to note that Matty Matheson is known more for his cooking than he is for his ability to not swear or cuss. This video has a number of F-bombs - so a word to the wise or to any parents who are reading this post with a child nearby... now's the time to put the headphones on.
Matheson doesn't "mince" words. He's wholeheartedly against putting anything into ground chuck to make cheeseburgers stick together. He's also not a fan of putting cheeseburgers on a BBQ grill - because - as he says - they fall apart. His recipe is deliciousness through simplicity and a hard stance against overcomplicating anything. Real simple. A cast iron pan. Premium ground chuck with a good fat to meat ratio. Griddle. Simple condiments like onions, pickles, and tomatoes...and most importantly - a giant brick of American cheese.
