Serving suggestions:

It is important to consume this fresh cheese at room temperature since it looses a much of its flavour when cold from the ‘fridge. It can be consumed alone, on a salad, pizza, panino, or with some fresh bread or accompanied with white wines, lagers, red tomato preserve or ‘schiacciata’ flat bread.

It’s aspect is very soft, compact and elastic, and when cut weeping with buffalo milk serum. Its taste is fresh with distinctive traces of buffalo milk.

The Lankaaster

The Lankaaster is a firm Dutch style cheese with a slightly open texture. The cheese is shaped as a loaf or a wheel to express the fact that it is meant to be sliced and eaten directly on bread as the Dutch farmers do. It has a unique profile that is given by the specific starter culture we use and makes it typical of cheeses made on Dutch farms earlier in the century. Packed in wedges vacuum sealed. Mild aged 2 - 4 months, Medium aged 4 - 10 months, Aged 10 - 12 months.

Our values, Why Glengarry fine cheese

Glengarry Fine Cheese is situated on the farm of Margaret Peters-Morris’ family ancestral lands in the corner of South Glengarry Township on the shores of the St. Lawrence River.

The land which is farmed by the Peters family is providing the quality hay, grass and grains which the Holstein herd is fed each year. The dairy is across the road from the cheese factory, the milk that goes in our quality artisan cheese begins at the family farm.

Margaret began making cheese from the farm milk back in the early 1990’s. We are of Dutch heritage therefore, gouda was always the number one choice of cheese to be made. The overall love of cheese in our family propelled Margaret’s interest to add more varieties to the repertoire with trips abroad to learn more about farmstead Cheesemaking and eventually developing recipes that are the basis of the varieties produced in the plant today. To have an artisan plant was Margaret’s dream and is now her life’s vocation, to be on a farm making cheese in the county where she grew up.

IBERIAN BELLOTA HAM CURED 52 MONTHS (HAND SLICED)

 Cured for a minimum of 52 months within our specially designed chamber. Every slice hand cut and balanced, contains hints of hazelnut fragrances, flavorful rich in taste and not overly fatty, soft with a hint of chewiness.

Can be served with melon or can be consumed directly and perfect to pair with a smooth red wine. A guaranteed lingering taste.

 

La Prudencia through the most modern technology and facilities, controls the breed, feeding, breeding and neutering of animals. All of that is supervised by our own technicians.

 Hams, shoulders and sausages are cured in our dryers and natural cellars  located at more than 1.100 meters of altitude, in the mountain range. The climate and geographical conditions of our mountains along with a low salt content of our products are fundamental elements of the process. Severe winters conditions and hot summers along with a slow, long maturation of our hams and sausages involve the magnificent quality of our pieces.

The Celtic Blue is a soft creamy blue cheese, with delicate blue veining and a limestone colored natural rind which is developed by specific ripening cultures. The typical blue taste is mild and not aggressive and is softened by a nice buttery aroma. Available by the part wheel, half wheel, full wheel (2.5kg) or cut wedges wrapped in French paper or foil. Aged 2 - 3 months
